          If you butcher your own chicken, you pretty much have to wash it before you store it in the freezer. :/ I suppose if your meat comes from the store, you can plop it into a pan and cook it sans washing it, but sometimes it all bloody. (I'm a washer, even that 'prewashed' salad mix.)

          My thought is, if you touch that meat even with one finger, you are likely to contaminate your kitchen unless you are very conscious to get that finger washed.

          I always rinse off my meats, in the sink, and follow that up by using a bleach based cleaner on the nearby surfaces including the faucet.

          People get into trouble by using the same prep surfaces for meat, and not cleaning them well, and then prepping foods they intend to eat raw on the same surface.

          That said I have had chickens meandering around and we have yet to get sick. Maybe we are lucky, or maybe I am doing something right.

            The wet market idea seams like a really messy, dirty affair. On the other hand living in a CAFO infested area, I can tell you, that isn't any better. It seems that butcher shops may be an idea for China, or else, buying the live chickens and taking them to at third party for processing?

            In China, as one rises up the social strata, one buys their food from Walmart. The Chinese people think Walmart food is cleaner. (On the other hand, Wholefood went thru a phase of buying from small Chinese 'organic' producers and selling that food in the US.)

            It's hard to know what is healthy to eat any more. I do think that wild birds could have contaminated live poultry in the wet market. Mixing live birds from so many flocks is a bad idea. I often wonder how we pull off county and state fairs without some disease popping up.
